Tina’s creamy chicken pasta

 Ingredients:

      *       500gm fettuccini

*       1 x pack shoulder or back bacon cut into strips

*       2 x chicken breasts cut into strips

*       1 x cup of frozen peas

*       8 x Denny mushrooms (sliced)

*       half a green pepper (cubed)

*       1 x onion (diced)

*       2 x teaspoons of olive oil

*       1 x tablespoon butter

*       2 x tablespoons of tomato paste

*       500ml fresh cream

*       thyme; salt and pepper to taste

*       grated parmesan cheese to taste

 

Method:

      *       Melt butter and heat oil over moderate heat.

*       Add onions and green pepper and braze.

*       Add tomato paste.

*       Add chicken strips and bacon and fry until cooked.

*       Add mushrooms and frozen peas.

*       Add cream, thyme, salt and pepper to taste and allow to simmer.

*       Add sauce to cooked fettuccini and mix.

*       Serve with grated parmesan sprinkled on top.

 

 

Tina’s roasted veggies:

  Ingredients:

      *       1 x medium butternut

*       1 x medium sweet potato

*       2 x medium potatoes

*       1 x red pepper

*       1 x yellow pepper

*       1 x pack Denny mushrooms

*       1 x medium onion

*       6 x small baby marrows

*       Olive oil

*       Thyme

*       Garlic salt

*       Rosemary

*       Salt and pepper to taste

 

Method: 

*       Slice butternut, sweet potato, potatoes into 1cm slices and place in oven tray.

*       Slice onion, red and yellow pepper into thick strips and add to oven tray.

*       Add mushrooms whole.

*       Cut baby marrows into lengths of 3cm.

*       Drizzle olive oil over tray.

*       Lightly sprinkle with garlic salt, thyme and rosemary.

*       Cover with foil.

*       Bake in a pre-heated oven of 180 degrees for approximately 50 minutes or until soft.

*       Remove foil when veggies are soft and roast until golden.

*       Add salt and pepper to taste.

*       Serve hot with chicken, roast or fish.

 

 

FELICITY SE VLASKYWE

 

          1 pak (200g) Cream Cracker-beskuitjies

          1 Liter melk

          250 ml suiker

          60g botter of margarien

          120 ml koekmeel

          80 ml  vlapoeier

          2 ml sout

          100 ml koue water

          3 eiers geskei

          5 ml vanieljegeursel

          500 ml versiersuiker, gesif

          40 ml kookwater

 

          Metode:-

 

          Smeer 'n vlak glasbak van 35 x 25 x 5 cm.

          Pak 15 van die beskuitjies in rye van 5 x 3 op die boom van die bak sodat die breeklyne         van al die beskuitjies in dieselfde rigting lĂȘ.

          Verhit die melk in 'n groot kastrol tot kookpunt.

          Voeg die suiker en botter of margarien by en roer tot gesmelt.  Haal van die stoof af.

          Meng die koekmeel, vlapoeier, sout en koue water deeglik.

          Voeg die eiergele by en klits goed.

          Klits 'n bietjie van die melkmengsel geleidelik in die vlamengsel in.

          Giet terug in die kastrol by die res van die melk.

          Roer aanhoudend oor lae hitte en kook sowat 5 minute tot dik.

          Haal van die stoof af en roer die vanieljegeursel in.

          Klits die eierwitte tot sagte punte vorm en vou liggies met 'n metaallepel in die vlamengsel     in.

          Giet die warm vla oor die beskuitjies in die voorbereide bak.

          Bedek die vla met 'n verdere 15 beskuitjies in rye van 5 x 3 sodat die breeklyne in       dieselfde rigting as die onderste laag s'n is.

          Laat die vlavulsel afkoel en plaas in die yskas om heeltemal koud te word.

          Meng die versiersuiker en kookwater tot 'n smeerbare versiersel.

          Giet dit stadig oor die beskuitjies en smeer eweredig oor.

          Hou dit in die yskas tot benodig.

          Sny die vlaskywe so groot soos die halwe kraakbeskuitjies en sit voor.

         

          Maak 15 skywe.
